I've stayed at B&B Herengracht21 a few times. First in 2008 shortly after they first opened, and then again in October 2021, and just last March (2023). It is the kind of place you are hesitant to recommend because you're worried it will be too popular and you won't be able to get a reservation the next time you go. Oh well, so be it. Great hosts, great location, great breakfast, great view.

Consider the Nadia Hotel, a small hotel/BnB near the Anne Frank House.
We spent a week there, cost was $1000 for the week, with breakfast included.
