Is it easier to take a train or a bus from the Schiphol airport to Brussels?
Which would be more interesting?
We are not limited by time the day of our arrival in Amsterdam so could also
go into Amsterdam from the airport and take a bus if necessary.

There is a train stop at Schipol so that is easier. The bus takes longer than the train. The train has toilets on each car the bus only has one.
Train is the way to do this.
There are two direct train services from Schiphol to Brussels: the high-speed Thalys and the hourly slower Intercity Brussels. Advantage of the latter is that tickets are valid for all trains on that day, while the Thalys has a compulsory seat reservation. Advance buying of tickets for the Intercity doesn't give discount, but it spares you buying a ticket at the airport. Just enjoy a coffee, while waiting for the next train to arrive.
