We are planning a 7 day trip to the Netherlands, flying in and out of Amsterdam. Want a well paced and not a very hectic trip. Is there enough to do in and around Amsterdam?

We spent 9 nights in Amsterdam and didn’t get to everything on our list. There is plenty to do, just a few things we did

Day trip by localbus.nl to Edam for cheese market (Wednesdays), Volendam, and Markem

Day trip to Brugges
Add in just walking around the streets and by the canals, looking for the best fries (in Rick’s book) we were busy everyday. We loved Amsterdam and would definitely return.
We are planning several days in Amsterdam next month and see that the Dutch Resistance Museum is closed until December 1st.
I had been looking forward to seeing that, but I understand that it had been quite cramped and will now have much more space.
I stayed in Amsterdam for 2 weeks (minus a 3 day trip to Belgium) and found plenty to do. There are enough museums to keep you occupied for days, and so many wonderful neighborhoods to explore. I loved the flea markets, like the Albert Cuyp market in de Pijp. I went to another large one in Amsterdam-Noord, that I cannot remember the name of. You can take the (free) ferry over to Noord and go exploring over there.
Rent a bike and take a ride out in the countryside - that was so much fun. And just walk along through the parks and across the canals. It's so peaceful and lovely there. If you like to shop, there were some interesting shops in Westerpark.
I also took day trips - one to Leiden, one to den Haag and one to Hoorn (charming village on the sea). Train travel is easy in the Netherlands. Believe me, you will wish you could stay 7 days longer!
