6 hour layover in Amsterdam

I will have a six hour layover in Amsterdam, is that enough time to go into the city see a canal or two and make it back in time for my connecting flight?

You can have two hours in town very easily from the time you step off the jetway. But, there's not much slop in that number. And it assumes you know how to use the tram to Centraal from the Plaza.

Yes you have time for a quick visit. Check out this FAQ:

You don't have to deal with the trams, there is plenty to do within walking distance of Centraal Station/Dam Square. This lovely canal area is just a five minute walk from the train station:

From there you can walk to the Anne Frank House, then walk to the Royal Palace, then check out a possible exhibit at the New Church, from there walk to through the Red Light District and back to Centraal Station to Schipol for your flight. There are lockers at the airport; best to use the one in the public area, not the ones near the gate.
