I've looked at many hotel and B&B sites.
I know I'd be claustrophobic in a cave. I would like to be near the sassi but not in a cave or underground. I need daylight and not to feel like I was in a crypt. Thank you.

Have you tried Booking.com? I don't see a way to filter results for non-cave, but there are ample photos.
I stayed in Torretta ai Sassi and it has a rock wall on the interior, but the exterior wall has windows. Lovely place, a short walk from sassi with a stellar view.
Most cave hotels in Matera are probably different than you imagine.

My room had a window on either side and didn't really feel very cave-like.
BTW, I completely understand your concerns, I could not wrap my head around the idea of a cave hotel. The reality was it was not underground and not claustrophobic. My room was quite large and the bathroom was probably the biggest/nicest of the trip. I would happily stay there again.
We stayed at B&B Vittorio Venento on the Piazza Vittorio Venento square. Our room had a balcony that faced the piazza. It could get lively on a weekend night, but we found the b&b to be very comfortable and within an easy walk to the sassis
I was in Matera in November for a couple of days and loved it. Great Saturday market. Used booking.com and always stay in apartments. I could not do a cave, my apts are usually 400-800sq ft so even one or two windows would not be sufficient. Lorenzo il Magnifico was great--spacious with full bathroom downstairs with a toilet and sink upstairs with the bedroom. Great hostess.
