I noticed in the video on Cinque Terre, that many of the farmers cannot get the work done on their vineyards because the young people are not interested. I would like to stay there and exchange labor for lodging - help one of the farmers work on the vines or walls in the mornings and be a tourist in the afternoons. Any way to contact one of the farmers to arrange this? Yes, I've worked with my hands all my life and grow trees and vines ;)
I'd strongly recommend that you read up on WWOOFing and work visa requirements for what you want to do, before you proceed any further.

As wisely suggested above, do your homework thoroughly, including googling up reviews on the experiences others have had with the program.
be very careful that you have the correct visa for working on your holiday.
