Wood crafts in Tuscany near Cortona?

My husband and I will be in Italy for 10 days in May. He does woodturning and other excellent wood craftsmanship. He'd like to visit a woodcraftsman for first-hand experience while I'm at a cooking class, near Cortona. Especially interested in olive wood perhaps making a chopping block or cheese board. Any ideas? I've tried general searches but need some help on what to look for.
