Looking for suggestions for good tours. What have you done that you liked?

Check out I Bike Tuscany--I used them for a one day bike tour outside of Florence 10 years ago and it was fabulous. They are still in business and I would definitely call them first if I were going.

Not sure if you're asking for single day or multiple, and self-guided or guided, but I've used Cicloposse in Tuscany, Umbria, and Puglia and would recommend them highly. They do self-guided rides from 5-7 days and provide hotels, luggage transfers, bikes, and meals.
