We will probably have to check our carry on as it is slightly larger than allowed. Which airline should I book for a one way. choices look to be between ITA, Aeritalia and Ryanair which say is operated by Malta air. I read to avoid Aeritalia due to frequent delays and cancellations and poor customer service.
If I am comparing budget airlines for a mission-critical connection, I check on-time performance for that specific route.
Personally, I would choose Ryanair, but mainly because I have flown them a number of times, have their app and an account already, and am familiar with how they operate. Nothing against any of the others, just comfortable with what I know.
We flew with ITA last March.
ITA would be my choice but they must b more expensive than RyanAir.

Budget airlines like Ryanair are generally a bit cheaper, but have more strings attached, especially regarding change flexibility and luggage restrictions or extra baggage charges.
Check both and compare.
