Where else to visit after week cooking class in Tuscany?

We are booking a week in Tuscany with "Italian Culinary Tours" where we will stay with friends at a villa. Day trips will include Volterra, Siena, San Gimignano, Florence, Pisa and Lucca.

After those 7 days, we plan to stay for another 7 - 10 days in northern Italy. (Retired, so our timing is flexible.) We are thinking of 2-3 days in one of the villages of Cinque Terre. I also want to return to Venice for 2-3 days. Your suggestions on where else to add to our itinerary would be really welcome.
My husband and I are both 75 and fairly physically fit, but not sure if we'll be returning to Italy after this so where should we not miss?
Want to add to our wonderful travel memories.
We've been fortunate to spend quite a bit of time in Rome and southern Italy so are concentrating on the northern portion. From a Med cruise, have also been to Florence, Positano, and Pisa on day trips.

P.S. The culinary tour in Tuscany will be the second week in September 2024 so have lots of time to plan.

I would head to the Dolomites. If you like mountains and hiking, you will be in heaven. If you don’t, you should look into Lake Como or on of the other Italian lake districts. Lake Como is gorgeous and relaxing. We stayed in Varenna, which we loved. I am not a fan of Milan, but seeing the Last Supper was fantastic. And the Duomo is beautiful. So perhaps one or two nights there would work. A lot depends on the time of year you are going. I haven’t been to Cinque Terre, but I’ve read it is overrun with tourists in the summer.

2 days are usually enough for Cinque Terre, while in Venice 3 days is a good time even if isn't your first visit there.
In the middle my best suggestion is Emilia-Romagna. For a food lover is a very nice area to be visited and there are several food visits that deserve to be done (Traditional Balsamic vinegar and Parmigiano-Reggiano making over the others). Is even a region plenty of history (UNESCO World Heritage cities, medieval fortresses, museums...), nature and activities (land of Verdi and Pavarotti, land of Ferrari and Lamborghini....)
