I have rented an apartment for a month, one that looks out directly onto the Grand Canal. I hear it can be noisy with vaporettos, delivery boats, etc., but maybe what would be as worrisome would be 15 story ships with loudspeakers and thousands of passengers! The apartment is on the second floor and does not have double pane windows.
The massive cruise ships have been banned from Venice.
Those which are allowed go up the Guidecca canal, not the Grand Canal.
For most of the year, parts of Venice are always crowded, regardless of ships.

As for delivery boats, refuse boats etc Venice isn't (yet) Disneyland. Real people still live there, and all those tourists still need to have their hotels and apartments serviced.
Shops and restaurants still need to be stocked.
In a city built on water that is simply part of everyday life.
The vaporettos, as well as being tourist transport (and you are a tourist) are also part of the public transport infrastructure of the city for the locals, many of whom are servicing the tourists in different ways.
But many will be travelling in from more affordable places out of the tourist parts of Venice.
