Curious if I clear customs at our connecting layover in Iceland or final destination in Munich?

Iceland is in the Schengen area. Passport control will be there. Customs is country specific. If you need to declare some goods that you are carrying that will be in Munich.

Iceland passport control is very efficient and quick. I was there on Wednesday.
If you are checking bags, they will be checked through to Munich.
But the answer to your question is.....you will clear "customs" in Munich.

A customs declaration only comes into play when you leave the airport.
