Our plane departs FCO @ 6:35 a.m. going to Amsterdam. What time do we need to be there? I don't know if the day of the week matters but it will be Tuesday Sept. 7th.

Trish, that's a brutal hour to be travelling! My preference would be to arrive AT THE AIRPORT at about 05:00 at least (04:30 might be a bit safer). While check-in times for inter-European flights are a bit shorter, I always like to have a bit of a "cushion" in case of unexpected events. Happy travels!

I once flew out of FCO (6:15am departure, weekday), through Amsterdam AMS on the way to the U.S. I arrived at FCO around 4:30am, and even though the check-in line was already lengthy at that hour, I made it to the departure area with a comfortable amount of time to spare. I would assume that as the morning progresses, the airport becomes busier, and you might need a bigger cushion of time.
