Just a few minutes from Trastevere (near the San Camillo hospital) (Tram 8 from viale di Trastevere or taxi).
Da Settimio: on 81 Via Val Tellina.
Not for accidental tourists. Pure Roman neighborhood restaurant with Roman food as a grandma would cook. No written menu, no English spoken, not a tourist in sight (only locals).
If you can deal with that go, otherwise stay with the tourists in Trastevere and go to Roma Sparita or Dar Poeta (pizza) or Vizi Capitali (fish) .

Haven't been at Dar Poeta since God knows how long. I don't even know if it's good anymore, but the pizza wasn't bad.
But "Da Settimio" is the bomb. But I didn't find it expensive, and I've been there in July last time.
There are dozens of choices, and they are presented all at once to you verbally by that lady, I don't even know how she can remember that menu in her mind. By the time she was done I couldn't remember what she told me first. But everything is so good, that it doesn't matter what you choose. It gets packed, so go early in the evening (before 9).

Roberto, based on the reviews of Da Settimio on Tripadvisor it looks like you weren't kidding about "No English spoken." And since there's no written menu AND since it's located well off the tourist beaten path it's no wonder you said no tourists. Looks fascinating. I've added it to my ever-growing Google Map of restaurants to check out in Rome. But next on the list for me (in May) is Testaccio, right across the river from Trastevere.

I was at Taverna Triluzza in July, not off the beaten parh but good. They have a website; make a reservation.

Places I have eaten in Trastevere have all been either good to very good, not necessarily great. however, I would go back to any of them, and I have. I prefer good regional food to fancy. I prefer places frequented by locals, not that any of these are not tourist stops.

Papa Re, via della lungaretta 149 - food is Roman and inexpensive, waitstaff is very nice, almost always locals.

osteria zi umberto, gets widely mixed reviews on trip advisor, food has always been very good for me, waitstaff can be a pain, but i swear people make their own beds with waitstaff, not always of course, sitting outside is really nice, but you need a reservation usually. Customers were from all over.

Nearby is Osteria Pontesisto, sat outside, busy street, waitstaff was a lot of fun, customers were a lot of fun, mostly english speaking customers, food was good.

On the other side of the river I really like La Quercia, In Piazza Quercia. Loved it in the 70's when it was basic and family style, still enjoy it now. Also, Alfredo e Ada, via banchi nuovi 14?, love that place.

Here's a second for Taverna Trilussa. Ate there based on description in Rick's book and it was my favorite meal in Rome over 4 days. The weather was nice so we sat at the outside patio.

For starters we had Mozzarella Carrozza (fried cheese - it was like a giant meatball and ozzing with cheese). My girlfriend had the Bombolotte alla Carbonara and I went with the Ravioli Mimosa (which the menue was a secret recipe &two-time winner of a contest in Rome and Milan. Figured why not) Wow it tasted amazing!!!! Also the presentation was unique as as it wasn't served on a plate but rather served in the pot it was made it.

Osteria pontesisto is my favorite in Trastevere and most not Rome! Try the carbonara and the saltimbocca!!! Right across the ponte sisto and immediately to the right. Am headed there in a few minutes for a goodbye to Rome dinner. I never hear English spoken, I wonder if all the tourists are pretending to be Romans like I am!?!

I have not been to Rome in years but these suggestions are forcing me to put it on the list! So for Da Settimio, bring along an Italian friend or stealthily record the lady and play it back to try and figure out what she said!

I am bumping this up to the top because it seems like so many more folks should chime in with there favorite restaurants in Trastevere and I would love to hear about them.

We really, really liked Marco G, so much so that we went back a second time. Don't be put off by the boring exterior. It's really nice inside and the food is delicious. The waitstaff is also very friendly but not over the top. Here's a link to some photos I took: Marco G in Trastevere (The reason the restaurant was empty for some of those photos is that we were among the first there that evening. It filled up completely by the time we left.)
