Do you have the tour documents yet? They should have more exact info.
You'll do a walking tour on arrival and then the Accademia later in the afternoon. The next morning you'll have a guided tour of the Uffizi with a free afternoon before your farewell dinner. Those are the 2 biggies where booking is needed so you do not have to worry about that.
What do you want to see? On various RS tours I've done the Galileo Museum if that is of interest to you. While you can buy tickets online at the Museum's website in looking at tomorrow's availability I see dozens of tickets available so that tells me you probably do not need to book ahead. I've also visited the Basilica Santa Croce (where Michelangelo and Galileo are both buried) as well as the Medici Chapels in the Basilica San Lorenzo neither of which need advance ticketing.
I recommend the Bargello (former prison, now sculpture museum) and the Museo San Marco (former monastery, where Fra Angelico lived and worked). I don’t think it’s necessary to book either of these in advance.
The Duomo Complex via one of the passes. We bought the Giotto Pass.
Are you staying longer in Florence after the tour is over? Or do you want to squeeze in as much as you can during the free time on the tour?
Rick Steves has suggested itineraries for Florence. You can use this as a starting point to find sites/experiences that may appeal to you.
