There is absolutely no way to know what the weather will be. You pack for a little bit of everything from cool weather to heavy rain. In general it should be warm and dry but it doesn't have to be.
For the Lakes and the Dolomites you will need sweater and a light coat maybe - shouldn't need gloves or scarf. Except for these places it should be warm still, but could turn cool. A heavy coat probably not needed, and best to dress in layers.
Years differ of course but last year I did Village Italy starting the 29 th of Sept and I thought it was pretty hot until the end in Orta San Giulio which is NW of Milan. We did not get as far south as Rome. I only had 1 pr of crop pants which I wore a lot.
I also always take a waterproof layer (not water resistant) to Italy. I travel with a Marmot Precip but there are many on the market. The Precip will fold up small enough to fit in my purse.
In your Northern destinations you can use the waterproof layer as a wind layer over long sleeves for warmth.
