Are water taxis pretty available? I will need to take a water taxi from my hotel in the Dorsoduro area to the train station ( S. Lucia) on a Monday morning. About how much time will it take to get to the train station from Dorsoduro by water taxi?
I am aware I could take a vaporetto but am not interested.

You should book one through your hotel. There is generally a 10 EU surcharge before 7 am, and according to this site, a general 15 EU surcharge for all taxis. Standard fare from a Venice hotel to Santa Lucia station is 65 EU. Should take about 30 minutes.
