We are staying in Lucca in early June and we are considering a day trip to Parma to go to the cheese making factory. Would this be possible and is it a worthwhile thing to do?
I spent a night in Parma about ten years ago. I didn't actually get out to the cheese factory, but I loved the town itself - not very touristy, very lively on a weekend night. Great food!
It's a 21/2 hour drive each way, and not faster by train I'm afraid.
Driving or transit? I did a tour to a place that was accessible by bus from Parma, and it took up half of the day (morning to late lunch) by the time you catch the bus from Parma, do the tour, and go back. It would be a long day coming from Lucca. If you have a car, though, maybe you can find a place on the outskirts that might be easier to get to? It was worth it (for me) to see all the effort going into the process and the I-don't-know-many-euros worth of Parmagiano lining the shelves. Bring an extra suitcase to stock up on cheese to take home.
