village to stay in tuscany

Looking for some help for a last minute trip to Tuscany, next week.
We have been there twice in past 2 years. We have stayed in Meuble Il Riccio in Montepulciano (did 2 wine tours Avignonesi and Poggio Antico) and at Agrituirsimo Marciano near Sienna. So we have had time to see both towns and have loved both of the them.
We are able to get 1 night at Marciano again this year but not sure if we should go back for just the night.
We would like to see some other towns or areas but not sure where to home base. We would like to do a split of 3 and 3 nights.

We are thinking of returning to the Montepulciano region to day trip to some other villages, like Assisi. Is this a good idea?
Should we look at staying near Volterra instead of Sienna?
What about the Chianti area?
Are we crazy to wing it and see where our travels will take us or should be prebook.
The past 2 summers we were on a schedule. Part of me doesn't want that this time.
Any suggestions on towns and placed to stay would be helpful.

We just loved visiting Volterra, but it's a little off the beaten path and quiet over there.

Have you ever been to Orvieto--another very popular hilltown 1 1/2 hrs. south of Siena? It's an area that has much to offer and is just over an hour from Rome by local train.
I don't have a specific city recommendation south of Florence. I would probably be shopping for a great B&B or agriturismo and just accept wherever it is. Virtually every farm in the region has rooms and apartments for secondary income--hundreds of places to stay.

This is Umbria but its great. You are right on the main piazza of Centro Storico. Coffee in the mornings with the Italians. Day trips to Orvieto, Assisi, Todi, Spoleto, Terni, Deruta, etc. Great location of Umbrian visits.

Next, consider Villa Arnilu just outside San Gimignano. You can rent by the day here. It is on the Volterra side of San Gimignano. Day trips to Tuscan towns is easy. See Certalo, Monterigioni, even Florence. http://www.agriturismoniccolai.it/

So it looks like we might do our first night in Orvieto on way to Montepulciano where we will stay for 3 nights. We have a few options in the town and outside. We are leaning towards Villa Mazzi.

We are looking for another place to stay for 2 nights. We would like something that offers possibly a cooking class and/or dinner, in another part of Tuscany. Suggestions?

Look at Borgo Argenina which is outside of Castellina in Chianti. It may be too close to Montepulciano, but Elena cooks with all of her guests - it is a wonderful night of "more wine" and laughing and eating !
From here we drove to Spoleto, Spello, and Todi.

Or Casa Chilene in Cortona. Jeanette welcomes you with fresh apple cake - we love staying with her. From here you are even closer to the Umbrian towns.
