We plan to do a few daytrips while in Italy. We want to go to Cinque terre from Florence etc etc. We are in Italy end of march/ beginning april. Do we need to book these trips already? Do they sell out? Or can we book them closer to the time once we know what the weather will be like.

You do not need to book a tour in advance. In fact you do not need to book a tour of Cinque Terre at all! Just take the train to Riomaggiore and then take the frequent, low cost train between the five towns. It only takes about two minutes to get from one to the next. Spend the day exploring the towns or if you have time stay one or two nights and really get to know the personality and culture of each one. No need to book a Viator trip there. Just take the trenitalia train from Florence to the Cinque Terre. You can hike between the villages or train between each of them on your own. Pickup one of Rick's book or watch his episode on his site here about the Cinque Terre.
I have done trips with Viator before. Sometimes a trip will sell out, but it's rare in my experience. I'd be comfortable waiting until closer to the tour date.
