First, are you an experienced cycle rider? Do you have a motorcycle endorsement on your US license? How big, engine size, do you intend to rent?

No to both both questions. The Vespas I've seen for rental in southern Italy are the 125cc Vespa LX and. I understand you don't need a motorcycle license to rent the 125cc Vespa. I've also seen the 200cc Vespa which I thought would be better for the Dolomites. I'm not sure as I've never been on a Vespa.

If you are not an experienced rider, then learning to ride in Italy is not the wisest decision. See the articles on Vespa at roninrome.com. A 125 is more than enough power for you at a beginners level.
