Is it feasible to get a “taste” of the Dolomites if we were to do a day trip from Verona? Where would we go and what would we see. Would rather travel by train then rent a car.
One way is to take the train to Bolzano, at Bolzano transfer to bus 350 to Ortisei

There are lifts in Ortisei that take you up close to the Dolomites.
Take the lift up to Seceda.
Yes! It's possible. It'd be a long day but doable. Check the train schedule. Bolzano is a fun town. Very lively, great restaurants. And the Otzi the ice man! https://www.iceman.it/en/the-iceman/.
I believe there are some more mild mountain sightseeing using Bolzano as a base. Or you could take a tour into the mountains from here. That might be a good idea. Then you wouldn't have to mess with renting a car and you could get super strategic with what you want to see.
We didn't use these tours when we went last year -- but we did store our luggage with them as we were driving through from Ortisei to Venice. (We stopped to see Otzi the ice man). :). https://www.basecampdolomites.com/portfolio/?lang=en
That would be a brutal day.
I agree with the other comments, you'd spend the whole day travelling and not see much.
But if it's somewhere you know you won't get the chance to go for a long time I would definitely go. The Dolomites are spectacular.
