I think the Castel Vecchio museum is great. Not only for the works displayed, but also for the architecture. A museum built inside a fortress, yet it is all air and light.

For dinner, I recommend Cucina Casalinga. It's on a small street right off Corso Porta Borsari, a few streets away from the actual gate. We had such an amazing dinner and we ended up going back the next day for lunch.
I spent a week in Verona and it was remarkable how many people were out for "un apertivo" every night, until sometimes ten o clock. It seemed to be predominantly Italians too. So for drinks and mingling, we would go to Ostaria del Bugiardo, directly off Corso Porta Borsari or Osteria al Canton which is at one of the ends of Piazza delle Erbe. I know there is a bias towards finding restaurants away from the popular tourist spots. But this area had a great atmosphere at night and it was nice opportunity to talk to locals and other tourists.
I "third" the opinion on Castelvecchio.
If you are only there for a couple of days, you might want to spend all of your time in Verona- it is a great city to explore on foot. But if you have time, we did a wine tour/tasting through Pagus wine tours. We saw one smaller family run winery and a larger one. It was a lovely day.

I loved my day in Verona and wished for more time. It's a great little city for strolling around. The Verona Card is a good way to see all the sites for very little money: http://www.tourism.verona.it/en/information/travel-your-way/verona-card
If you love Shakespeare and Verona, there areas real plaques with quotes from Romeo and Jukiet around the city. My favorite is at one of the city gates, that begins "There is no world outside Verona's walls..."

We had a delicious lunch at Osteria il Ciottolo, and if you like gelato, you must try my favorite at Gelateria Pretto ;-)
We enjoyed walking along the river & visiting Saint Stefano's church, across from Ponte Pietra, and Verona's Cathedral

Follow Rick's guidebook walking tour for the best sites. Some gorgeous churches with wonderful art, amphitheatre is really interesting with lots of explanations in English, lovely river views, architecture and main piazzas are really great, altogether a beautiful town.
