250.00ish per night is what I'm looking for

My suggestion would be this hotel in Varenna - https://www.royalvictoria.com/en . It's an easy walk from the rail station, and right in the centre of town. It's only a short walk from there along the lakeside promenade to the ferry dock.

It would be a good idea to book WELL in advance.

In Bellagio look at Hotel Bellagio.... it is up a few steps not very expensive, great staff and good breakfast. I celebrated my 60th bday there and the little terrace view of the lake is awesome.

If looking for luxury, Grand Hotel Serbelloni in Bellagio is away from crowds , on the waterfront.

I used booking.com and found a variety of nice places that were not too expensive although more costly than our normal accommodation. I’ve booked for October. You can see where they are on the map and the prices so you can decide if they are too expensive for a couple of nights and there generally are a number of photos. I don’t need a view because we’ll just walk down to the water or stop at a cafe / bar on the way.

We stayed in a private apartment in Varenna in 2018, with balcony and terrace with picnic table. Under $200/night. It was across the street from the "dog beach" (we only saw a couple of dogs), with a beautiful view. Small but perfect for two. We swam there, and we even rented a boat for a day. Used booking.com. We are in Varenna mid-October. This will be our second AirBnB stay in the town. Under €100/night. 2 bedroom, one bath & managed by a SuperHost. Upper floor apartment with a balcony & view of the lake. We have been pleased with all of our AirBnB accomodations in Europe.

Hotel Olivedo is a short (slightly downhill) walk from the Varenna train station. The hotel location is perfect, right on the lake in front of the ferry landing. Every room has a lake view, and there is a wonderful family that runs the hotel. We have stayed there a few times and highly recommend the hotel, service is first rate. Breakfast is excellent, as is dinner at the hotel restaurant. Room 26 is a 3rd floor corner room with great lake views from large windows on 2 sides and a small balcony. Rates are very reasonable.
