I don't understand the difference between the 6,50 fare at the top (the 60 minute fare) and the much cheaper 1,10 fare towards the bottom...
Can someone help?

The first fare is what a tourist probably pays. The lower fare is for a Cartavenezia card holder (the discussion on the card fees are just above the individual fare listings). You pay a monthly fee for a card that gets you a reduced rate on individual tickets.
Consider buying a pass for the amount of time you're there (24 hours, 48, etc). It's worth it just to be able to hop on and off whenever you feel like it.
