My flight back to the US leaves Marco Polo at 7:05 AM. At that early hour will I be able to sleep in Venice the night before leaving or will I have to stay one night at a hotel near Marco Polo? If I sleep in Venice that last night how will I get to Marco Polo in time for my early flight.

Just be aware that a private water taxi will cost you about 100 Euro.
The buses from the Piazzale Romae start very early and are timed to coincide with the early morning plane flights. With a 7:05 departure, you can stay in Venice.

I did this in September, and had no problem. Stay the night in Venice and then take a water bus (not the private water taxis...they're very expensive) from the closest stop to your hotel to the Piazza di Roma.
As soon as you get off the water bus, walk up the stairs to the large parking lot and find bus number 5 on the left side of the parking lot (there won't be many buses at that hour, so you won't have a problem finding it when it pulls up).
Taking the bus to the airport takes only 20 minutes and costs 1.80 EUR, which is far less than the other alternatives.
