Help! I need a room in Venice for only 1 night (October 17th), and they all seem to be booked or REALLY expensive or both!
Try booking.com or venere.com, both of which allow you to look only at hotels that have availability for your night. You can even restrict by price. The results page gives you a little info about each hotel so you can see which ones are on a canal. For example, I see that Starhotels Splendid Venice is on a canal and is available that night but it is pricey. What's your budget?
Venice hotels are expensive to begin with, and rooms with a canal view are the most expensive of all. You may have to moderate your room choice to fit your budget.

You will need to lower your expectations, raise your budget, or both. The suggestions of http://www.venere.com/ and http://www.booking.com/ are good ones, and you can try http://www.hotels.com/ as well. I just had a situation in Dresden, Germany, where an Ibis hotel was sold out on Ibis's own site, but available on hotels.com - I don't know why, but I grabbed it.

I stayed at Pensione Guerrato. They gave us a corner room from which you could see the Grand Canal from between two buildings. You had to stand at the window to see the view. Somehow I think you are looking for something with a balcony or other way to easily enjoy the view. Expect to pay big bucks for that, as Venice is not cheap.
According to Booking.com, Pensione Gueratto is completely sold out that night. Not surprising, as it is one of the most popular places, thanks to Rick. And October is high season in Venice. However, if ounwill give upmon the canal view, Booking.com listed several places with rooms available for around $210 or a little more, price quoted in dollars, not euros. One is Al Piave and there are others. Somtry the booking services to check availability as suggested above.
There are hotels on canals other than the Grand Canal - if you are there for only one night when do you arrive and when do you have to leave - you might look for places near the Station which do tend to be cheaper and are conveniently located for transport to and from the airport etc. Rooms overlooking the canals can be noisy - boats are using them all night and Venetians start early in the morning and you can be awoken by boats making deliveries. I have stayed at the Casa del Melagrano a couple of times and they do have some rooms overlooking a small side canal You would have to ask for one specifically. They are well located with a vaporetto stop less than 5 mins walk away and about a 20 min walk to the station.
