Before flying back to the states, we are staying in Venice one night after returning from the Dolomites. We are dropping rent car off at Venice airport but want to explore the island for the day and have dinner there. What’s the easiest way to get from mainland to island and back? Staying near airport for early morning departure.

Where are you staying? The No 5 bus runs between the airport and Piazzale Roma making stops along the way.

There is a train straight into the heart of Venice. From there walk easily. Or get a water taxi for a tour of the grand canal. I would not eat dinner there though - expensive and bad service for tourists.

But if you are at the airport, you will need a bus to that train straight into the heart of Venice. Location of the hotel is everything in this discussion.

ATVO and ACTV provide bus service between the airport and Piazzale Roma, the only place on the island where vehicles go. From there ACTV runs vaporetto (water bus) service the length of the Grand Canal and elsewhere, or you can walk. The train doesn't go to or from the airport.
EDIT: The OP is staying near the airport, presumably in a hotel with a shuttle.
