We will be arriving at the Venice airport at 11:00 pm and I'm trying to figure out the best and most economical transportation to our hotel in about the center of the city, not far from the S. Angelo stop on the Grand Canal. Suggestions please?

You may be able to take the Alilaguna orange line. It stops at S. Angelo. The last one leaves the airport at 12:20.
It might be midnight before you deplane and clear immigration (if your flight originates outside the Schengen zone), and maybe retrieve checked bags. The bus to Piazzale Roma is much less expensive than a taxi, and takes about 20 min. From there you would take the night vaporetto. But it doesn't stop at S. Angelo. You'd have to get off at Rialto.

The last No 5 bus to Piazzale Roma is at 1:10 am. At Piazzale Roma, the "N" boat runs all night, but does not stop at Sant' Angelo, Get off at Rialto. Every other boat continues to San Samuele if that is closer.
I suggest you have a very good map to guide yourself from the vaparetto stop to your hotel. Hopefully it is easy to find.
I was once lost in Venice on a late night when I was over there for college--48 years ago. I'll never forget that magical night and the red head that was with me.
Have you asked your hotel the best way ( or what the options are) to get there at that time?
On that note, giving them a heads up that you will be waltzing in at 2 am is in order. Otherwise, you might find a locked door and sign saying come back at 7 am.

I've done a lot of research based on the suggestions here and I'm afraid with my late arrival, baggage, etc. I may miss the last bus/boat. I've found a car service that sounds too good and I'm wondering if anyone is familiar with Neat Shuttle (website: www.neatshuttle.com). I can only find four online reviews, all on Trip Advisor and duplicated in Italian. Makes me wonder....
Another option if you miss the last bus is a taxi to P. Roma and the night vaporetto from there.
Marco Polo Airport website lists the telephone number of the taxi service in case none are there waiting. (Unlikely unless you’re on the very last flight of the night).
