Most of this route happens in Italy and Trenitalia will book you the entire way through to Zermatt. You will probably have at least 2 changes after riding the fast train from Venice to Milan.
It's much too early to book tickets for spring of next year but you can check a few months before. If you are willing to commit to specific train you can buy fast train tickets at a significant discount.
