Vegetarian friendly cooking classes in Italy

We will be visiting Bologna this summer and using it as a hub. We plan to spend at least a day each in Florence, Venice, and Verona, and potentially additional day trips to Ravenna, Rimini, Arezzo, Padua, Modena, Ferrara, and Maybe Milan. Additionally, we will be spending some time in Rome.

Has anyone participated in an affordable small group VEGETARIAN FRIENDLY cooking class in any of these towns/cities that you would recommend?

You will like this one in Verona because it’s a class that isn’t adapted to vegetarians; they are vegetarian. This is from my trip report last September:

Our late afternoon activity/ dinner combo was a Cooking Class with Valli Homemade. This couple was such an entertaining duo, and Valli showed us several more advanced pasta shapes (which I will be making at home this month), besides the main ones we made for our delicious dinner. She is an excellent instructor! Their home is located five minutes from Piazza Bra - very handy. I heartily recommend this cooking class!
