At first, I wanted to argue that there is no singular "Italian " cuisine, but a collection of regional ones. But the quote by Premier Melloni put it into context that explained things nicely "Because for us Italians, cuisine is not just food or a collection of recipes. It is much more: it is culture, tradition, work, wealth,”.

It's great to see that Italian cuisine has been recognized by UNESCO. Dining is one of the things I enjoy most about Italy, not only because of the quality of the food but also the relaxed way of just enjoying the meal.
