We will be staying at a property in Umbria near Paciano for four nights. Thoughts/ ideas for day trips from this area?

Too many to list, but I am sure others will chime in with their favorites. Much depends on if you have a car or are relying on trains and buses.
Assisi would be at the top of my list, but you are in a location where you can access Tuscan and Umbria villages easily. You need a guide book. Here is a sample of places to look into: Umbria - Perugia, Spello, Spoleto, Gubbio, Assisi, Trevi, Deruta, Montefalco, Bevagna.
In Toscana, Montepulciano, Montalcino, Pienza, Orvieto and then not far from Orvieto in Lazio is CIvita di Bagnoregio.

If you aren't relying on trains and buses, you can make an interesting day driving south to Civita di Bagnoregio and enjoy exploring this amazing little hill town, the gardens, nooks, and wonderful vistas. Then drive to Orvieto where you can explore, see the Duomo which took 300 years to build, and take the Orvieto Underground tour. Get an early start!
Thank you for your advice. We will have a car, so mobility is not an issue.
I would consider Todi and Cortona as well. if the town has a festival while you are there (such as Spello Infiorito, filled with flower art), you should move it to the top of your list.
