Has anyone taken an Uber from the Naples airport to Sorrento? Our hotel charges 136 euros for our family so I’m trying to find other options.

You can take a non stop bus from the airport or a train from Naples train station.

Nobody has taken Uber in Naples because Uber Black operates only in Milan and Rome (Uber Black is a professional luxury black limo service, the only Uber service allowed in Italy).
The Curreri Viaggi company operates a shuttle bus from NAP airport to Sorrento for 10€ pp. they also offer private transfer service (contact them for a private car service quote). Info below.

Uber is not usually used in Italy and can be very expensive as I think they only use black car service there. Try looking up trains or metro. Bus service is good as well. I use Loco2 for train travel in Italy its easy to use.
