What are your favorite non-tourist-traps restaurants?

Since almost all of central Rome is full of sights that are of interest to tourists, you will find some "tourist-traps". On our several trips to Roma over the years, I find it's just easier to start searching when you are hungry. Try someplace down a quieter street, take a look at the menu that's always posted outside, and see if it's to your liking.
You might take a walk over to Trastevere and poke around some of the side streets. We stayed there for a week, about 7 years ago, and enjoyed the area. Last year we stayed in Monti, and had some nice ravioli in a random restaurant. Also, had an over-priced, mediocre meal in Monti, some place that was supposed to specialize in fish. Sorry, I can't remember either name.
If you can be more specific in your question, i.e. location, types of food you like, others will chime in.
I've posted this before, but I keep going back here when I'm in Rome: Renato e Luisa, on a side street near the Largo Argentina. They make everything in house, from the bread to the pasta to the meats to the desserts. Only open for dinner, not lunch (too busy baking all day I guess ;))
