Two adults arriving Rome end of Feb should go south or North with 8 days itinerary?

Thinking go south to visit Naples, Sorrento and Amalfi coast but heard many places and hotels are closed Ferries are not running in between Serrento and Amalfi coast and less frequent bus and trains schedule. It will our first trip in Italy, open to travel either south or north as long we can make the most of the 8 days itinerary. Had been a few countries in Europe and we used public transit totally to get around. I would appreciate if you have hotel and tour recommendations also. Thank you.

It will our first trip in Italy, ................... make the most of the 8 days itinerary.

What are you planning as your entry/exit point(s)?

What are your intentions of what you want to see/do?

Sorrento and Amalfi coast in Feb., is not what I would consider .'making the most' of a 1st trip of only 8 days, but it's your trip

Since it’s your first trip to Italy, people usually recommend at least Florence & Rome, but what do you want to see and what activities, i.e, cooking classes, outdoor activities, etc. Do you like history or more centered on food experiences, museums, walking through small towns, etc? If you can narrow down what you’re hoping to see, we can provide some direction.

We are pretty flexible. Mainly just to take time to relax from our busy working schedule. Would like to visit couple of popular sites in Rome and Naples. We would to do some hikings and outdoors activities as we continue to South. We can easily adjust given the time is not season. Yes we would appreciate some fine dining if reservations still available. Thank you.

You can go to Sienna and to Florence. Florence full of special places and art; Sienna is charming.Go to Sienna for 1-2 nights if you can.... or use as base and do two day trips to Florence.
There are other side trips you can do from there as well (San Gimignano, wine country). Sienna has enough to do for two days.... and is so nice it makes good base, too. I went to Orvieto from Rome and it felt very touristy. We drove so we also stopped at couple of other places and it was worth it.
