Tuscany/Rome Recommendations

Ok, I've posted a few times on here trying to narrow down my itinerary and I think I have finally landed on sticking more to the Tuscany area with the in and out of Rome. Now looking for more targeted recommendations to help with planning. We are looking towards June 2027. 2 adults and teen

Itinerary:

Montalcino (3 nights - 2 full days) Recommendations on restaurants in the city; vineyards to visit (looking more for smaller; 2 hour/possibly lunch tour) and things that may have a draw for a 14 yo girl (ie horseback riding; vineyards with farm; etc)

Florence (4 nights - 3 full days) Recommendations on restaurants; other fun activities not on the average "things to do" (ie perfume making; cooking class; etc)

Monterosso al Mare (4 nights - 3 full days) Recommendation on boat tour; guided hike company (would love an am hike and we enjoy guided hikes to learn about the area); restaurants and anything else fun to do

Rome (3 nights - 2 full days) Recommendation on place to stay (neighborhood) - have been recommended Testaccio as an area to stay; favorite guided tours (private or semi-private); restaurants

In addition to those, we will be passing through and would like notes on a "don't miss" or lunch spot (if noted) - we will not have long in any of these spots, but would like to see on the days we are traveling from one locale to the other. These were the suggested stops by the private transfer company I have viewed: Montalpulciano (lunch/wine tasting); Monteriggoni; San Gimignao (lunch); Pisa; Lucca (lunch)

Will you have a car?
Montalcino has no train access

Rome needs more time
CT needs less

I assume you are planning to travel to Montalcino on arrival day?
That’s a long risky drive after an overnight flight

Would make more sense to travel to Florence on arrival then pick up car as you leave Florence, use it in Tuscany and consider dropping car in La Spezia or Pisa for your CT days

No car - arranging private transfers. Am very happy with the itinerary, just looking for recommendations as noted.
