Tuscany Nov/Dec

The last leg of our trip in November is Italy. We're flying into Rome, renting a car and staying somewhere (we had a place booked that just cancelled on us, so we're waiting to hear back on a few others). We're hoping to stay in the Pienza/Montepulciano area. We've been to this area a few years ago but in Sept. With a lot of the agriturismos already closed for the winter, I'm wondering if we're going to run into the same thing with restaurants and shops being closed. Some of the towns we're planning on spending time in are:

Pienza
Montepulciano
Chisure (Abbazia di San Galgano)
Cortona
Volterra
San Gimignano
Siena
Sovana/Sorano/Pitigliano

Should we pass on any of these due to closures? We've been to several of them already, but love the area so much we want to spend additional time in some of them (a few are new to us).

We visited the abbey of S. Galgano, while staying in Massa Marittima. The abbey is a long way into the countryside, and there's not much nearby that we could see, except some really tiny villages. I couldn't find Chisure in my guidebook, but maybe you know something I don't. I would guess that there is a website on which you could check for opening times. Everywhere else is a place where non-tourist people live, so I would think there will be places open, if at reduced hours.
