I have to be in Florence for business in early January.
Thinking about taking another five days to tour Tuscany.
Are they open for business in January or do I need to go to a big city?

Where is Tuscany do you want to go? It’s a big place. We’ve gone in February and the towns like Montepulciano have lodging and restaurants and shops open. Visited an abbey, took walks in mild winter weather, enjoyed the lack of traffic. But where do YOU want to go specifically and what do you want to do?
Siena, Volterra, San Gimignano, Montepulciano, Montalcino, Cortona.

We were in Tuscany in mid-December. We had no problem with accommodations and meals. We visited Siena, San Gimignano,Volterra, Radda, Greve. Castelina, and Gaiole.
I'm assuming you are renting a car. I suggest you stay in an agriturismo in the countryside south of Florence or near Siena. This will eliminate having to drive in and out of Florence, which would be time consuming.
We stayed at Castello id Verrazzano just outside Greve, which is 20 km south of Florence. It was a great home base to explore all the places you mentioned in a subsequent post. Nothing would be more than 1 1/2 hours away. As much as I loved Castello di Verrazzano, I suggest you look for something closer to Siena. That would put you even closer to the towns you listed.
The only places we've seen closed in Italy in November, December, and January are beach towns, a few restaurants, and the outdoor areas of some restaurants. Hours at museums and tourist sites are often slightly shorter or different.
