I hope you have a great trip. We’ve been in Italy now for 3 weeks, including a week staying at an agriturismo in Umbria up until yesterday morning. They produce their own prosciutto, cured salami, and many varieties of sauces and ragú . They raise cattle, pigs, several varieties of fowl, and bunnies, too. They’ve got about 1,500 olive trees, which will be harvested next week for olive oil. A very hardworking family, and the farm’s been in the family for generations.
Anyway, they’re not Tuscan, although not super far from where you’ll be based. Maybe you’ll get lots of recommendations for actual Tuscan farms. Even if you do, my thought is that, perhaps, seeking out any Tuscan agritusmi might yield some further possibilities. Even if you’re not looking for a place to stay, some offer a place for a meal, and might provide tours, if you’re looking for that. Ours certainly had a provisions shop, complete with at least a dozen quarters of aged prosciutto and sausages hanging from the rafters, along with packages of more cured meats in a display cooler Countless jars of other goodies too, produced on site.
