I will be staying 2 nights in Florence Aug 1 & 2. For our full day there, I have scheduled a private tour with Miles & Miles. The planned schedule is to go to San Gimignano and then to Siena. I believe that because it is a private tour I could change things up if I wanted to -- I was thinking of maybe going to Volterra instead of one of the other towns. Any suggestions? I'm looking for something less touristy and crowded. Also, anyone use Miles & Miles?

Are you saying that you have only one full day in Florence and that you're planning to spend that day outside of Florence? That makes no sense to me. Stay in Florence. There's plenty there to see and do for several days.
I'm with Michael, There are many bucket list items in Florence. Even if your are not an art lover, the Uffizi should be on your list. I would hate to travel that far, and not see that gallery. For me, I could spend several days just walking the streets. It really is a beautiful city. Whatever you do, Enjoy! Ciao, Jeff
I guess I misspoke. We will arrive in Florence Sunday morning and will be there until Tuesday night.
Sunday and Tuesday would be spent exploring Florence.
I would still stay in Florence for that time. It really deserves three days of exploring.
I agree with all of above, would stay in Florence, but if you're set on a day trip, my first recommendation would be Siena. Or you can do Pisa and Lucca in a day.
Less touristy and less crowded means you definitely want to take some time away from Florence. Although beautiful and amazing I have been there in August and it can be hot, crowded and not exactly the dream of Italy for three days. If I had never been to the wonderful hill towns in Tuscany I would feel I had missed so much. San Gimignano is great. Smaller, but still lots of cafes, shops and Italian life with
surrounding countryside that is beautiful. Everyone has their idea of a dream trip, but the mix of smaller towns and big cities is what I like. I am a photographer, so I tend to see things a little differently, but many people a day or two in Florence will give you a lot, plus I always want to leave a place wanting more... not feeling like I am ready to leave and never return.
Not to rain on the parade, but in August, Siena and San Gimignano will probably be as full of tourists as Florence.
If you really really really want to get out of Florence for a day trip I would reccomend Lucca, Pisa and San Gimiano
