After spending three days in Axe en Provence then one week in Tuscany we have three nights before flying out of London for home,Melbourne.
Deciding wether to just spend the three nights / two full days in London or go somewhere else like Milan or....? Thank you

Have you toured London before? If not, go there.
You could take the fast train up to Venice and fly to London from there.
