Have you thought of joining a group tour? I went with a bike tour (which from a torrential downpour cancelled the biking portion) to San Gimignano and another tiny town, and we would have biked from one to the other if not for the rain. I am sure there are bike tours that hit Pisa as well. We ended up doing a winery because of the bike portion being cancelled, but I know there are many tours through Tuscany that don't focus on wine.

Do you know roughly how long the bike tour would take and where to search for?
I think Florence to Pisa on a bike might be a bit far?
After all it’s not like we can take the subway back to the hotel 🤣

How much time do you have for this day trip from Florence? There are several group tours that go to Pisa for a 1/2 day tour but I don't know how much of the countryside you'd see. There are other full day tours that go to Pisa, Sienna, and San Gimingnano that would allow you to see more of Tuscany but would take all day.

Jules, 2 days is barely enough just for Florence! It may be especially problematic if you're there on a Monday when many of the museums are closed, assuming you're wanting to see some of them. What's your plan for Florence?
Full Saturday and Sunday
We are not museum fanatics
We are mostly interested in the country side, shopping and food spots.
I would chose to stay towards the country side and away from rush of Florence it self, but I e been told Florence it’s easier to commute to other places.
