Tuscan villa

Just booked flights for 2 weeks in Italy at the beginning of September. We will be starting in Venice and ending in Rome. We will be spending 2 nights in Florence and then wanted to stay at a Villa style hotel in Tuscany, someplace with a pool so we can relax, drink wine, eat good food and unwind. Does anyone have any recommendations? One thing we would love to do is take a day long cooking class so a recommendation for that would be awesome too. What is the perfect Tuscan small town?

Last year we stayed at Villa Vignamaggio, Greve in Chanti, (the film Much Ado About Nothing was filmed there) it sits on a hill in the middle of vinyards/olive groves, near Greve, it's said that Leonardo da Vinci visited often and the Mona Lisa is the daughter of the owner and the background was taken from a view from the Villa. The Villa is lovely with beautiful gardens, a pool, do book the wine and dinner tour, easy travel to many hill towns and beautiful rustic rooms with modern amenities, breakfast was served outside looking down the valley, absolute wonderful.

Umbria, Casa del Poggio (near Terni, easy access to Rome)
tuscany, Villa Arnilu (San Gimiganano)

The water is cold, very cold, don't figure you are going to swim much. Too expensive to heat the pools.
