My grandfather's last name was Trento. I would love to go there next year. Is there a tour that either includes Trento or is close enough that we could take a side trip to visit the city?

None actually go to Trento but you could certainly arrive early or stay after on any tour and visit on your own

Trento is well served by (mostly) high speed rail and is reachable in in about 2.5 hours from most of the major northern cities like Florence and Milan and is less than that from many others - Bologna 2hrs, Verona 1.5 hours. You'll have to change trains in Verona but it is a very straightforward process.
You could easily purchase tickets from any Italian town and travel there yourself as an add on after adventure to any tour.
There are walking tours of the city: https://www.getyourguide.com/trento-l2506/trento-guided-walking-tour-of-the-historic-centre-t472045/ and I'm sure many other tour options if you want to get to know the city.
But if you want to research your family's place in Trento I would gather as much information as you can and do research ahead of time about who to talk to locally.
