I’m taking my grandsons, ages 21 and 17, to Italy this summer. I know I will need a notarized permission letter from his parents to leave the country but is there anything else I will need to enter Italy?

you will need all your passports, with at least 90 days validity after your scheduled return day.

Just the passports. Ask the parents if you should carry the passport for the younger one all the time. My teenage nephew had a bad habit of misplacing things so his parent warned me to carry his passport for him.
