Traveling in Northern Italy late October/Early November

My partner and I will be traveling from Verona to Innsbruck from October 27th to November 4th.
We are not expecting snowy mountains or winter sports to participate in, but rather winery tours and dining well with a hike or two in between.

Is this a good time of year to visit?

I have read since it's the shoulder season some hotels may be closed, which is no problem since we do plan to use airbnb mostly- however do the restaurants and wineries close as well? We assumed since its high altitude many wine makers are likely still in their harvest season by the time that we visit.

What are some towns you recommend visiting between Verona and Innsbruck?

So, youโ€™re aware that picking up a car rental in one country and dropping it off in another would incur really big drop-off fees, and are planning accordingly?

Yes I do understand that. Hence the addition of train to my comment.
Do you have any recommendations for your favorite towns, restaurants or wineries?

I enjoyed visiting Merano - lovely walks along the river and through the countryside, Gardens at Trautmannsdorff Castleโ€ฆ
