I will be leaving Sorrento and flying to Sicily. I was planning on taking a train to Naples and then getting a flight from Naples to Catania. Does anyone have any suggestions on the best airline or maybe a better way to execute this trip?

Search flight options on Skyscanner or Goggle.
You might be able to take a bus direct from Sorrento to the airport, saving your from making a connection at the train station:
