How much time should I allot for this trip? This will be on Saturday September 28th, 2019. Current plan is to catch the 11am or noon train from Naples to Florence. Also, how early should we arrive at the train station to be on time for either of these trains? Thanks!

It depends -- standard answer for many of these types of question. Personally I would allow something around four hours. The bus between Positano and Sorrento takes an hour. Then another hour on the circumvesuviannna plus some time for waiting for buses and trains. The additional wrinkle that can cause problems is that the bus starts in Amalfi city and if the bus is full it will not stop at Sorrento. But on an early Saturday AM, that probably would not be a problem. I would start at eight with the idea of catching the 11 am with a fall back to the noon train. You just have to be earlier enough to buy a ticket and get on. No line -- ten minutes. There is no security check or anything else to delay you.
Opps, missed the private car in the title. What does the private car company say? Again, traffic can be an big unknown but I think I would allow three hours for the drive.

I would tell the ride provider " I need to catch the xx (time) train" and let them tell you when they will pick you up.
I would make sure there is at least one more train after your preferred time, just in case of a blocking accident, flat tire etc that cannot be predicted.

I hope you don't want to drive in Naples. Seemingly no rules and crazy drivers. My advice: don't drive. Hire a car with driver. He would know how much time he needs to catch the train.
