Travel in Piedmont without a car

My boyfriend and I are planning a trip for 2 weeks - the last week of April/first week of May. We'll be starting in Bolzano, then visiting Venice, Florence, Siena, Cinque Terre, then flying out of Milan. We'd love to spend a little time (1-3 days) in Piedmont after Cinque Terre before flying out. We're planning to do all this without renting a car, however, and I'm wondering how possible it will be. We're lovers of good food and wine and I'd hate to miss the riches of that region when we're so close. Any tips?

Last September, we went from Cinque Terre to Torino by train and really enjoyed the city for a five-day stay. With your short stay, picking one spot (Torino or possibly Alba) would be your best bet.
